Fish Stock


Ingredients:
01. Cold Water                5 ltrs
02. White fish bones
trimmings chopped        1kg
03. Parsley                     5gm

04. Black Pepper         6pcs
05. Bay Leaf                 1pcs
06. Lemon Juice         5 ml
07. Salt                      1 pinch

Method:
Sweet the onion and chopped fish bones in melted. Do not allow ingredients to take a color. Add pepper corns, lemon juice, and cold water, bring contents slowly to the boil and skin the stock. Add the rest of ingredients and simmer the stock for a further 20 minutes, strain immediately and use as require. Do not over-cook stock as this could make the stock go sour.
