Ingredients:
01. Sugar                       100gm
02. Water                       3tbs
03. Milk                          600ml
04. Egg                          4Nos
05. Vanilla Essence       Few Drops

Method:
Grease six ramekin dishes. Put the granulated sugar and water in a heavy based sauce pan and heat gently until the sugar has dissolved. Bring the syrup to the boil and boil until the sugar caramelizes and turns a deep golden color. Pour the caramel into the ramekins, making sure the bases are evenly covered.

Gently heat the milk to just below boiling point and remove from the heat. Lightly whisk together the eggs, sugar and vanilla and gradually add the hot milk. Strain through a fine sieve and pour the custard into the ramekin dishes. Cover with oiled greaseproof paper and place in a roasting tin half-filled with hot water. Bake in moderate oven for about 1 hour or until the custard has set. Remove from the oven and allow to cool. Chill the cooked custards for several hours or overnight, them run out on to individual plates to serve (otherwise the carmel will be hard. Do not chill once turned out).
