Ingredients:
01. Oil                              500ml
02. Egg Yolk                   4nos
03. Vinegar                     50/75ml
04. Lemon Juice             2ml
05. English Mustard        5gm
06. Salt                           To test

Method:
  • Thoroughly whisk egg yolks, vinegar, mustard, salt.
  • Add the oil gradually, whisking thoroughly and continuously until a stable emulsion is formed.
  • Whisk in lemon juice and correct seasoning. (Extra vinegar may be added to adjust flavor as required)
